Dutch baby, oh yeah!!!!
I have found my perfect breakfast food!
It can be savory or sweet and uses ingredients you probably already have in your kitchen! Plus, it’s so quick and easy to make, but feels so fancy!
I’m talking about the Dutch baby or German pancake. Have you ever tried it? It’s like a fluffy, fruit-filled crepe, but so much easier to make ( crepes never turn out right for me- so I have given up on them!)
The basic recipe for a Dutch Baby
4 eggs
1/2 c. flour
1/2c milk
1/3 c sugar
1/4 tea salt
1/2 tea vanilla
2 Tbs melted butter
Preheat the oven to 450.
Mix all the ingredients in a blender or with an electric mixer for 1 minute
Pour mixture into a hot skillet ( we use our cast iron skillet) Make sure to add some bacon grease, tallow or butter to melt in the bottom of the skillet BEFORE you pour your mixture in!
Bake for 15 minutes. Enjoy!
Now here is where you can get creative! Here are some add in’s
Raspberry- add 1 Tbs of lemon zest to the mix. Sprinkle 1/2 c fresh or frozen berries in the hot skillet before you pour the batter on top
Blueberry- same as the raspberry- we have also left out the lemon zest and added almond flavor instead of the vanilla
Apple or Pear: Use fresh or canned apples or pears, and place in the hot skillet for a minute before you add the batter. To the batter add 1 tsp cinnamon, a dash of nutmeg, cloves, and ginger.
Try adding peaches with almond flavor, mixed berries, some pecans, and brown sugar in the pan before adding the batter, or any other way you’d like!
For savoy:
increase the salt to 1/2 tea and decrease the maple syrup to 1 tea ( or omit completely)
ham & peppers: dice 1/2c ham and 1/2c peppers & onions- add to hot skillet and cook for a minute or two before adding the batter
Maple bacon: fry up some bacon, crumble it, and set aside while you make the batter. add the bacon crumbles to the hot skillet, drizzle some maple syrup over the bacon then add the batter.
Veggie: fry up your favorite veggies ( 1/2c-2/3c) pour batter over the veggies, bake, and then sprinkle cheese over the hot Dutch baby
